"Fausto and Cinzia Cellario come from 3 generations of winemakers in the village of Carru' in the far west of the Langhe. This area sits effectively in the foothills of the Italian Alps. The family's vineyard holdings total to approximately 30 hectares split amongst 5 different vineyard sites in the south of the region. With vineyard parcels in Novello and Monforte, the Dogliani plot is probably the estate’s most privileged slice of land. This estate is practicing organic (although will soon be certified) and sulfur is added only in minute quantities and only when absolutely necessary. Although this family is first and foremost Dolcetto specialists, this is 100% Favorita from the Piemonte. Favorita is the local moniker for Vermentino in these parts. This rendition is harvested by hand, destemmed, fermented and aged entirely in stainless steel. The resulting wine is flavorful, fruit-driven, and surprisingly thirst quenching."
