"This is very cool. This fresh release is vinified from 200-300 year old bush vines planted on ferrous-quartzite soils in Chile’s Maule Valley. It is made from 100% Pais. Although Pais is not particularly heralded as an international grape variety—this is a grape that played tremendous historical significance in early Californian and South American wine production. The wine is harvested by hand and fermented with indigenous yeast in open top tanks prior to a brief aging in stainless steel and clay tinajas. The wine is dosed with just a tiny pinch of Sulphur before botting in 1 Liter bottles (which means an extra glass for you!). In the glass this is driven by a brambly array of wild raspberries, wild strawberries, cranberry, flint, woodsmoke, and pepper. Despite its ample tannin, the finished product remains fresh and chillable. Pair it up with homemade tacos, skirt steak, and spicy sauteed vegetables. 100% Organic. Very low sulfites."
