"This wine is made entirely from Pais, hand-harvested from a half-hectare whose vines are up to 200 years old. The winery is practicing organic, and the minimalist touch (indigenous yeasts, neutral barrels) is evident in the wine's profile: dusty in the nose and slightly prickly on entry, with modest intensity just right for the tart berry fruit and rustic mineral notes. Unfined, unfiltered, and with zero added sulfur. It's a wonderful introduction to an ancient grape that rarely gets varietal attention these days."
