"Promises is a Provencal field blend vinified au Printemps -- springy and fresh -- using a host of diverse indigenous grape varieties (red and white) farmed organically and fermented using only ambient yeast and bottled without any added sulfur whatsoever. The end result is crunchy and tannic, but crushable. There's a certain simplicity and purity here that I find incredibly satisfying. I can't help but be reminded of the kind of house wine you'd find at Paris' best natural wine bars. Quite simply, it tastes like French wine that hasn't traveled on a cargo ship. This is very rare."
