"This year's Bohan Dillon is scructured and tangy: rife with tart cranberry, minerals, cherry spice and black tea. It’s bright acid and soft but clingy tannins are just so classic Hirsch. This will reward dividends to the patient drinker with even just minimal cellaring—although a very pleasant drink now, especially at the table, I expet that in 1-2 years time it will begin to seriously hit its stride. I can’t wait to partner it with a nice sockeye salmon. Pull the cork and stick it in the fridge 30 minutes prior to serving. And drink up over the next 5-8 years."
