"Chateau la Colombiere is located in the village of Villaudric in Northern Toulouse. This historic property can trace the planting of vines back to the 1400s. Today, it is looked after by Diane and Phlippe Cauvin who have converted the property to biodynamics with the intention of rendering a wine that best expresses the place where it is farmed. At Chateau Colombiere, the vineyard is approached not just as a farm but a natural ecosystem. The grape variety is called Negrette, which while largely unheralded in other parts of France, locally is considered the king of grapes. The resulting wine is rich, brambly, rustic, and well equipped for an equally rustic meal of say, wild game, roasted mushrooms, or a rustic board of cheese and charcuterie."
