"Our second batch of Spry is produced with a similar steep in the kettle of foraged sumac and rhubarb from our farm, with a twist on how we introduce the wild component of this beer. Like the first batch, most of the beer was transferred to a stainless steel fermenter for primary fermentation with our house yeast. After introduction of the sumac and rhubarb, we filled our coolship with vibrant strawberry colored wort to be inoculated with wild yeast and spon cultures from the winter air. This portion was then blended into a stainless steel fermenter with the rest of the batch during its primary fermentation with our house yeast."
