Wild Fermented Italian Ale with Organic Malvasia grapes.
Made with 75% beer wort (Chrysopolis) and 25% Malvasia organic white grapes.
Initial fermentation time takes about 30 days. First day they add the crushed wine grapes. Second day they put the addition of Chrysopolis wort. Open fermenter. No temperature control. Over the initial 30 days the liquid is recirculated 3 times (maximum surface exposure of yeast + grape skin).
Follow up fermentation is in closed tank at colder temperature for about 6 months until all sugars are fermented (apparent final gravity: - 0.8 Plato!)
After 6 months the beer is bottled with secondary fermentation in the bottle.
Flavor/aroma profile is very complex and elegant, almost an hybrid between beer and wine. Tartness derived from malic acid {grapes} with typical floral notes of Malvasia grapes
