"Grapes are hand harvested and allowed spontaneous, semi-carbonic maceration before indigenous yeasts complete alcoholic fermentation. The wine is aged in stainless steel for 6 months, and bottled unfined and unfiltered with only 30mg/L SO2 added at bottling. Flavors of ripe summer red and black berries, umami earthiness, and savory cracked pepper with a whisp of smoke. Medium plus body, medium plus acidity, but lower tannins than might be expected of a wine with this much stuffing. Perfect with a winter braise, or chill slightly for the ultimate grill companion. 12% ABV"
