"This is one of those wines that gives you something new every time you take a sip. It starts with yellow apple, Asian pear, and oily citrus peel. Then come the white flowers and honeysuckle. Next up, button mushrooms and crushed stone. The palate continues in the same style, starting lively and fresh, then transitioning gently to creamy and just slightly round, finishing with a pinch of sea salt. This wine begs for fish; I can close my eyes and taste sole with citrus beurre blanc. Soft cheese, too; something not too salty would be just right. At 12% alcohol, it plays the parts of both aperitif and entree equally well."
