"The most understated LV so far when first opened, but woah did it change over the next hour or so!!! At first, it was beautiful and possibly still the nicest wine of the night, but not that much more beautiful or complex than the Chenes and Chevres, but oh my goodness did this thing blossom!!! We put the wine aside for about an hour after the first pour and then revisited it at the end of dinner. This became one of the most beautiful champagnes I’ve ever tasted! It is really hard to describe it, but I’ll try. So at first, it was a lot like a red fruited Hautes Chevres, but after opening up, it became so floral, so aromatic. It leaped out of the glass with Everything! Flowers, chalk, spice, fruit, herbs, mint, lavender, tarragon, totally crazy. I think if you mentioned any beautiful aroma, I probably could have smelled it in there. On the palate the wine was at first subtle and beautiful, but then became so much more. This wine went from feeling very similar to the other wines, to being a total standout. It is hard to imagine something more perfect than Les Chenes and Hautes Chevres, but this is it. The finish was very herbaceous and floral and subtly salty. Now having done this tasting, I am really hoping to get to drink this bottle on it’s own, so I can just really get into it from start to finish…. So this one, needs some time to open to give you the full magic, but wow!"
