"This 100% Chardonnay from the Languedoc-Roussillon offers up hard and fast evidence that even France’s far south is sometimes capable of producing balanced, mineral-driven Chardonnay. Fond Cypres purchases these Chardonnay grapes from their neighbor who is farming organically on a combination of limestone/blue limestone and clay. The wine is made using very low additions of sulfur at bottling. The resulting wine is marked by Asian pear, crunchy Macoun Apples, and a limey/lemony citrus zest that provides a pleasant juxtaposition for its salty minerality. It is so food friendly in fact that the importer calls this ideal wine for breakfast, lunch, or dinner, but of course a chicken roasted with fresh herbs de Provence immediately comes to mind."
