"Winemaking follows natural wine practices, including hand harvesting, fermentation with native yeasts, and minimal or no added sulfites. A roughly equal blend of Merlot and Cabernet Franc from vineyards with an average age of 45+ years planted on a combination of clay, chalk and gravel soils. This is Despagne-Rapin’s ‘second wine’ and includes fruit from younger vines. Aged for 15 months in a combination of oak barrels and inox cuves. Full bodied and finely balanced with light acidity. Aromas of black cherry and spice are matched by well-balanced notes of leathery oak, tart raspberry, cherry jam and a hint of cloves. Long and refined on the finish with tannins that will allow it to be aged."
