"This bianco hales from the Piedmonte—where it is somewhat of a local specialty. While I may have tasted just 8-10 Erbaluces in my whole career, every example has offered a unique combination of freshness, richness, and the distinct impression of alpine flowers and river rocks. The Ceick interpretation is no exception—driven by crunchy green apple, crisp pear, almond skin, fresh herbs, and aromas of the meadow—dried grass, baby white flowers, and glacier run off. An apt pairing for bitter salads, even dry-aged beef, or just drink it on your lawn with a subtle chill and a chunk of rich creamy cheese (perhaps la tur or boursin)."
