"A blush of red by white makers. It was harvested early to stay light -- light in color and in alcohol, especially with 11% vol. High in acidity, it is lively, fresh and has fine tannins. Rabatiere is a bright red, fruity with aromas of cherries and plums. We delight ourselves in its finesse, freshness and joviality. To tell you a little bit, it's been a long time since we wanted to make red wine. After several millennia with Rabatiere de Grolleau on a parcel under closure, finally, here is our Rabatiere de Pineau d'Aunis, planted and pampered for 5 years by our good care and hands. Rabatiere is the name of the place, from the road at the end of the road next to the kennels. Pineau d'Aunis, because it's an endemic grape, to be preserved and replanted, sensitive, fragile and delicate like the wines we love. 7-Day semi-carbonic maceration, breeding 6 months in tank, no added sulphites. 100% Grape juice."

"I've said it before: Pineau d'Aunis is my spirit animal. This rare grape from the Loire has the most distinct signature of any red variety I know: black pepper, black olives, and cranberries. Somehow it carries with it some tannin and yet the wines remain light on their feet and thirst-quenching. This is one of the finest captures I've ever tasted. 40 mintues in the fridge just to bring the temp down a hair is ideal."
