"Not your average Txakoli. The Luzia de Ripa is produced inland, in the village of Delika where Txakoli is generally vinified without a spritz and more like a mineral-driven Chablis. This particular bottling is produced from 90% Hondarrabi Zuri, 10% Izpiriotza Txipia (Petite Manseng) sourced from a single vineyard known by the moniker "Larrimbe" which roughly translates to "my mothers vineyard" and quite fitting considering the parcel has been handed down from mother to daughter for several generations! The resulting wine is marked by a happy combination of flint, green apples, cream, and fresh linen. Pair it up with a simple herb roasted chicken, poached salmon, or razor clams."
