In January I had the special opportunity to attend Paris Wine Company’s “Wine Weekend” in Burgundy.

For this event, PWC hosts nearly all of their producers at a Chateau outside for back-to-back days jam-packed with tasting.

I must have tasted 150+ wines in two days. It was incredible.

I walked away with so many exciting finds for the store, including the wines of Pierre-Henri Rougeot (Meursault), Beaujoalis’ freshest: Elisa Guerin, crazy new labels from Raphaelle Saint Cyr, insane value from Montfrin, and so many others.

As I boarded the flight headed stateside, I couldn’t stop thinking about this wine:

2021 Mas des Cabres “Equinoxe” (Languedoc-Roussillon Rouge)

As some of you know by now we’ve been working with Florent’s wines for many years.

This is effectively a one-man operation located in the Cevennes Mountains in Languedoc.

From farming.

To winemaking.

To bottling.

Florent Boutin basically does it all.

In the winery Florent’s philosophy is rooted in minimal intervention.

The end result is decidedly marked by place and flavors of the earth.

This wine on offer today is his latest creation, and I think it’s brilliant and delicious.

An idiosyncratic blend of Merlot and Black Muscat (Muscat de Hambourg to be exact)—a combination of dark horse grapes greater than the sum of its parts. I don’t know if I’d love either one of these grape parcels vinified all on their own, but put them together and they just work.

Don’t be freaked out by the Black Muscat, this wine is most definitely dry—and it contributes bright, aromatic levity which delightfully compliments the chassis of Merlot.

Farmed organically and fermented with indigenous yeast in tank.

The wine is singing. Most of all, I can’t believe the price.

My Notes Read: The resulting wine is concentrated in flavor, dry, and surprisingly lifted, sprightly, and fresh. On the nose saturated blackberry, cherry liqueur, wild herbs, freshly sliced white mushrooms, sous bois, raspberry tea, and cherry blossom harmonize. On the palate, it is light on its feet and carries with it a fine layer of tannin and a Beaujolais-eque taste and feel. It’s unusual these days find this kind of complexity at this cost of entry. 13%

A flawless accompaniment for hotdogs and hamburgers off the grill, pulled pork, charcuterie, and the like. Stick in in the fridge and set your timer for 40 minutes to attain utter apogee crushability.
