"Chateau Ksara Reserve du Couvent comes from grapes that are manually harvested from vineyards at an average altitude of 1000m. Grapes are considered to be organic as no sulphur based pesticides are used -- although no certification has taken place. The vines are not irrigated. After de-stemming, the wine is transferred to vats after fermentation for 12-15 days then pressed. Malolactic fermentation occurs and then the wine is matured in oak casks for 6 months. Combining the Rhone's Syrah with equal measures of Bordeaux's Cabernet Sauvignon and Franc, this distinctive Lebanese blend from the go-ahead Chateau Ksara displays the aromatic leafiness of the cabernet style at the same time bringing an attractive purity and juiciness of texture to the ripe, vanilla-spicy cassis-laden fruit."
